Autumn Breakfast on the Run


Because we're always on the run. And we're all so very sick of granola bars and yogurt.

Ingredients:

Half a bagel (I used a gluten-free brand)

Whipped cream cheese

Honeycrisp apple

Toasted pumpkin seeds


Preparation:

Cut the apple into thin slices.


Cook & Serve:

Toast the bagel and smear on cream cheese. Top with apple slices and pumpkin seeds.


A Little Backstory:

We get in ruts where we always cover our toast with avocado or it's just easiest to grab that power bar from our desk drawer. Sometimes you just need to see a different combo and say "I could make that." So here you go. And bonus, you get a serving of fruit and some nice nutty protein, too.
