A quick, warm breakfast loaded with Vitamin C and antioxidants.
Ingredients:
Bagel (I use gluten-free Udi brand)
Blueberries
Honey (raw is especially yummy)
Preparation:
Wash the blueberries -- they will be a little too roly-poly to spread unless you smash them gently in a bowl with the back of a spoon. Cut your bagel in half.
Cook & Serve:
Toast your bagel and spread with honey and blueberries.
A Little Backstory:
Early in my career, I was communications manager for an architecture firm in downtown Minneapolis. Downstairs, there was a bagel shop -- and most mornings I picked up a toasted sesame seed beauty with peanut butter. Upstairs was a cookie shop -- and after lunch I'd go fetch a snickerdoodle or sugar cookie. If not for my gluten-intolerance later in life, I just might have turned out to be a 400-lb. woman made completely of dough.
