Make a bunch of these baked beauties, because you won't be able to stop eating them. The recipe uses shredded beef, but you could substitute chicken or pork.
Ingredients:
Corn tortillas
Shredded cooked beef (I used a crockpot chuck roast)
Shredded cheddar
Preparation:
Preheat oven to 425. Warm tortillas about 15 seconds in the microwave to soften them. Place beef on about a third of the tortilla (see picture below) and roll tightly. Line them into a greased casserole dish or baking pan, seam side down. Sprinkle with cheddar.
Cook & Serve:
Bake uncovered for 25 minutes until crispy. Serve with salsa and dip -- pictured is a spicy salsa verde and a sour cream-guacamole-onion dip.
