Cucumber-Blackberry Salad

When you just can't take one more carrot-tomato-lettuce plate of ho-humness.

Ingredients:

Bag of mixed or spring greens

Fresh blackberries

Handful of fresh basil

1 cucumber

Shredded chicken (rotisserie is handy)

Poppyseed or vinaigrette dressing


Preparation:

Rinse the blackberries. Shred or chop the basil. Shred the chicken. Peel and slice the cucumber.


Cook & Serve:

Mix all ingredients and top with dressing of your choice. A simple homemade vinaigrette is 3 Tablespoons of extra virgin olive oil, 1 Tablespoon white wine vinegar or balsamic vinegar, a pinch of salt and pepper to taste. Shake or whisk to fully combine.


A Little Backstory:

A lot of my recipes use basil, because every year I grow it on my balcony and every year IT SPREADS LIKE A MEDIEVAL RAT PLAGUE. Seriously, I always have too much fresh basil and I'm always discovering new ways to use it. It's delicious, so you're welcome.
