Cup o' Cake

You'll see box mixes for these single-serve desserts. Ridiculous! Make your own. In less than 10 minutes with prep and measuring.


Vanilla is the most flexible of flavors. Top with fruit, chocolate sauce, jam, powdered sugar, frosting, honey, candy, ice cream, whipped cream or whatever turns your crank.

Ingredients:

2 Tablespoons butter

1/4 cup flour (I use an all-purpose gluten-free)

1 egg yolk

3 Tablespoons sugar

1 Tablespoon milk or cream

1 teaspoon vanilla

1/4 teaspoon baking powder


Preparation:

Put butter into coffee mug and microwave until melted (about 30 seconds). Add the other ingredients and stir well.


Cook & Serve:

Microwave for 1 minute or until cake starts to pull away from the sides of the mug. Serve warm. And never buy one of those sad, expensive "Cake for One" mixes again.


A Little Backstory:

I'm not a huge dessert eater, and I don't really care for chocolate. (I'll take fruit-flavored ANYTHING over chocolate.) But cake, every once in a while, is a soothing treat. Makes me think of birthdays as a kid, where I always got my favorite homemade cake: confetti angelfood with pink frosting. My mom would cool the cake in the pan by balancing it on the neck of a bottle of Kitchen Bouquet. Remember that stuff? I think it was pure MSG with caramel color. How the hell did we even survive the 70s.
