Store-bought and fast-food chicken nuggets are filled with crap. A chicken breast, egg, oil and bread crumbs. And 10 minutes. That's all you need for one serving.

Ingredients:
One fresh chicken breast, boneless and skinless
One egg
1/4 cup bread crumbs (buy the store-bought - panko crumbs are light and crispy, and you can get gluten-free)
Canola oil
Optional: Jerk seasoning
Preparation:
- Cut any fat off the chicken breast and cut into 1-inch cubes. If you wish, sprinkle with jerk seasoning.
- Crack and scramble the egg and place in a shallow bowl or on a plate. Place the bread crumbs onto another plate or shallow bowl.
- Heat a half-inch of canola oil in a frying pan on the stovetop over high heat (8 of 10). Sprinkle a drop of water into the oil; if it immediately bubbles/sizzles, it's hot enough.
Cook & Serve:
Dip the chicken pieces into the egg and flip to coat both sides. Then dip in bread crumbs and flip to coat both sides. Slide coated chicken into pan of hot oil and flip when they are golden brown (2-3 minutes). Cook in oil until second side is golden brown (another 2-3 minutes). Drain on a plate of paper towels. Serve hot with sauce of your choice, like sweet and sour, sweet chili, honey, BBQ, ranch, or buffalo.
A Little Backstory:
It had been years since I had eaten at McDonald's, and I picked up some chicken nuggets in the drive thru on the run. I opened up the hot nuggets as I drove -- and bit into a weird, knotty bit of gray gristle. Then I threw it out my open window and that, as they say, was that. Know what you're eating, folks.
