Frozen Lime Tartlets

Tartlet? Pie-let? Whatever you call it, it's fresh, tart, creamy and requires no baking. Perfect for a little bite of dessert after a heavy meal. This recipe makes 9 servings.

Ingredients

- 1/3 cup fresh squeezed lime juice or bottled 100% pure lime juice

- 4 oz. whipped topping (like Cool Whip or Reddi Whip) - plus more for serving

- 7 oz. sweetened, condensed milk

- 4 oz. cream cheese (I used whipped cream cheese)

- 1 Tablespoon lime zest (finely grated lime peel)

- About five graham cracker squares (I used gluten-free)

- 2 Tablespoons melted butter


Preparation

- Place the graham crackers into a plastic Zip-Loc bag and crush finely with a rolling pin or side of a glass. Mix with your melted butter and set aside. The consistency should be like pliable wet sand. If too dry, add more melted butter. Too soupy, add another crushed cracker.

- If using regular cream cheese, cream with the side of a spoon until smooth. Add the sweetened condensed milk to the cream cheese and mix well.

- Add the lime juice and zest/peel and mix until smooth.

- Add 4 oz. of whipped topping to the lime mixture and fold it in until combined.


Freezing and Serving

- Using individual silicone cupcake liners, fill the cups about 90% with the filling mixture. Top with the butter-cracker-crumbs and press very lightly to make a flat surface. Place on a small baking sheet or plate and freeze for at least 4 hours.

- Unmold by carefully peeling back the edge of the cupcake liner and popping out the "tart." If difficult to unmold, let them sit at room temperature for a few minutes.

- Serve cracker "crust" side down. Top with additional whipped topping and a tiny piece of peeled lime.


A Little Backstory

Cooking for one or two doesn't mean you have to skimp on dessert -- and you can still eat healthy. (Hey, I'm not judging, but I'm guessing you won't feel good about yourself if you bake and eat an entire pie.) Recipes like this give you single servings. They're easy to dole out to yourself over the course of a few days, and they're great for parties, allowing people a guiltless little taste of something sweet.
