Basically, deconstructed tacos -- in a warm and comforting pile.
Ingredients:
Corn chips
1 lb. of ground hamburger
Taco seasoning
1 chopped red onion
1 diced tomato
1/4 - 1/2 cup of cilantro
Shredded cheddar or Mexican cheese blend
Rice
Jalapenos (fresh/chopped or jar)
Hot sauce
Sour cream
Preparation:
Mix the onion, tomato and cilantro. Cook the rice according to directions (microwave rice is fast and great).
Cook & Serve:
Brown the hamburger and drain. Add taco seasoning with 1/4 cup water and cook until thickened and blended. Start with a base of corn chips. Layer on hamburger, rice and cheese (you want the cheese to melt on the hot ingredients). Top with the onion-tomato mixture. Serve with jalapenos, hot sauce and sour cream.
A Little Backstory:
This is straight out of my former mother-in-law's kitchen. Myrna was a tiny woman with a huge collection of recipes, most of them just in her head from when she was a child. Everything she cooked was in super-size portions, ready to fill up half a dozen family members or a gaggle of South Dakota farmhands -- even when there were only two people at the dinner table.
