Feels like making soup should be more complicated than this. Shhhh -- don't tell anyone it's as easy as opening a can of the sodium/preservative-filled stuff.
Ingredients:
1 cup or 1 can of low-sodium chicken broth
Green onions
Jalapenos
Canned or fresh bean sprouts
Preparation:
- Chop green onions and jalapenos. Remove the seeds from the jalapenos.
- Add bean sprouts to broth.
Cook & Serve:
Warm chicken broth with bean sprouts in the microwave. Add onions and jalapenos to taste.
ANOTHER OPTION: Well, the options are limitless, really. Throw in some cooked noodles. Or shredded rotisserie chicken. How about a handful of fresh parsley and some roasted carrots? You see what I'm getting at, you guys. Homemade soup is goddamn easy.
A Little Backstory:
My mom used to make me Lipton Instant Chicken Noodle Soup when I was sick. She'd make it in one of our 1970s fat, blue mugs, and the tiny little stapler-sized noodles would gather in the bottom like a haystack. This recipe tastes 1,000 times better, and with the use of the microwave instead of the teakettle, takes about as long as Lipton. I still have one of those 1970s fat, blue mugs. Still makes me feel better when I'm sick.
