Using pre-cooked frozen shrimp makes this a 10-minute recipe (including 3 minutes for pouring a glass of wine).
Ingredients
1 Tablespoon butter
1 lb. prepped and cooked shrimp (shelled, deveined, no tails, thawed)
6 cloves of minced garlic
3 Tablespoons honey
Juice of two small limes
1/4 teaspoon salt
1 teaspoon cayenne pepper
Chopped or dried parsley
Preparing & Cooking
Heat a skillet over medium-high heat and melt the butter. Add the garlic and saute until brown. Add the shrimp and saute until cooked (you'll need more time if the shrimp are uncooked). Stir in the honey, lime juice, salt and cayenne pepper, and cook until the sauce is slightly thickened.
Serving
Sprinkle with parsley for serving. This shrimp is great on rice, or with stir-fry vegetables. I served it on a broccoli slaw with lime juice. Ooh, I bet throwing it in a tortilla with slaw and a cream sauce would be STELLAR, too.
A Little Backstory:
Even when my workdays are light, I don't necessarily want to spend a beautiful summer night in the kitchen. But I shouldn't eat a greasy (but so easy!) fast-food burger, either. You know what, friends? Those aren't our only two choices. You can eat healthy, beautiful, quick and -- most importantly - delicious meals with a few ingredients and just a little creativity. Cheers.
