Enough heat to get through your stuffed-up head and soothe your insides.
Ingredients:
Rice noodles
Grape tomatoes
Green onions
Jalapenos
1 cup or 1 can of low-sodium beef broth
Red pepper flakes
Preparation:
- Prepare the rice noodles according to package directions (usually add to boiling water and stand 8-10 minutes).
- Slice tomatoes in half. Stir with olive oil and spread on baking sheet covered with parchment paper. Put in 375 oven for 40 minutes. Make extra and freeze so you have them for next time!
- Chop green onions and jalapenos. Remove the seeds from the jalapenos.
Cook & Serve:
Warm beef broth in the microwave. Add tomatoes, cooked noodles, onions and jalapenos to taste. Sprinkled with red pepper flakes. Serve with a side of cough medicine, Kleenex and Netflix.
A Little Backstory:
Canned soup is full of horrible things. It's especially difficult to find good, gluten-free soups. I threw this recipe together when I was barely standing up with a raging sinus infection. So ... no excuses why you can't warm up some broth, too, and throw some chopped stuff into it. Like my grandma used to say, "You're sick ... you're not dead. Quit being a baby."
