Served warm with ice cream, this dessert is made to serve 8-10 ... or to serve you, 8-10 times.
You could substitute tart apples for peaches, if you prefer.
Ingredients:
1/2 cup butter
1 cup flour (I use a gluten-free blend)
2 cups sugar, divided in two
1 Tablespoon baking powder
1 cup milk
4 cups of fresh peaches (about 6 medium peaches) pitted and sliced
1 Tablespoon lemon juice
Cinnamon
Preparation:
Pit and slice your peaches.
Cook & Serve:
- Preheat oven to 375.
- Melt the butter in the microwave and pour into a 13 x 9 baking dish.
- Combine the flour, 1 cup of sugar and baking powder in a mixing bowl. Add the milk and stir to moisten the dry ingredients.
- Pour the batter over the butter in the baking dish, but DO NOT MIX OR STIR.
- In a saucepan over high heat, stir together 1 cup sugar, peach slices and lemon juice. Bring to a boil, stirring constantly.
- Pour peach mixture evenly over batter in the baking dish, but again DO NOT MIX OR STIR.
- Sprinkle with cinnamon.
- Bake for 40 minutes or until golden brown. Serve warm with ice cream.
A Little Backstory:
I made this late last summer with fresh in-season peaches. Ate the whole pan myself over the course of a work week. Sorry, not sorry.
