A lovely side dish to balance out a heavy meal, like ribeye steak or pork ribs.
Ingredients:
3 nectarines
1/2 pint of blueberries
1/4 cup chopped fresh basil
2 Tablespoons honey
Juice of 1 lime
Preparation:
Wash and slice nectarines, discarding pits. Rinse and dry blueberries. Chop your basil. Whisk together honey and lime juice.
Cook & Serve:
The fruit can be served as is, or grill the nectarines on a hot grill (or hot grill-pan on your stovetop) for 3-4 minutes until golden-char marks form. Drizzle blueberries with honey-lime dressing and gently stir in the basil. Top the nectarines with your blueberry mixture.
A Little Backstory:
I've always been a fruit and veggie zealot. My mom likes to remind me how I'd come home from school and, instead of asking for a donut or candy bar, I'd request a hunk of lettuce. Fruits and berries make great additions to your salads and side dishes. And they pair surprisingly well with meats. Ever had bing cherry sauce on a steak? Oh, I should add that recipe, shouldn't I.
