Open-Faced Breakfast Sandwich (Any Time)

Egg McMuffin or gas station breakfast sandwich? Um, no. Ick. Make your own in record time.

Ingredients:

Slice of prosciutto

6-inch piece of French bread (I used a gluten-free brand)

6 fresh spinach leaves (the bagged kind is cool)

1 egg

1 tablespoon thyme


Preparation:

Preheat oven on Broil - High. Put bread on a baking sheet and toast it in oven for 2 minutes, without toppings. Scramble the egg on the stovetop or in the microwave. Layer spinach leaves onto the bread, then the scrambled egg, then the prosciutto.


Cook & Serve:

Broil until the prosciutto is crispy. Sprinkle with thyme. ANOTHER OPTION: Top with a slice of cheese. Or hot sauce. Whatever floats your boat, my fellow cooks.


A Little Backstory:

My ex-husband was positively weird about dirtying dishes. As if making a smoothie was too hard because then you'd (*gasp*) have to clean the blender! If you're the type who doesn't want to muck up a pan by cooking an egg in the morning, here's an easy out: Whisk the egg in a cup or ramekin (I prefer a splash of milk in it, and a dash of pepper). Put in the microwave for 1 minute on high. You'll get a perfect, fluffy scrambled egg -- and the dishwasher gets one cup. No muss, no fuss.
