I love a salad that comes together with a few fresh ingredients! Buy a jar of pesto, or if you have ample garden basil to work with, make your own. As below, this recipe will serve one person.
Ingredients
3/4 cup cherry tomatoes, sliced in half
1/4 (I used more!) white cheddar or mozzarella cheese, cut into small cubes
1 to 2 Tablespoons basil pesto (add a splash of olive oil if it's too thick)
2 Tablespoons toasted pine nuts
OPTIONAL-- 1/2 cup cooked pasta
Preparation & Cooking
Mix all ingredients well and serve cold. Can't get easier than that!
Serving
A bed of spinach or romaine would be a nice side to this salad.
A Little Backstory
After a slow start to the cherry tomatoes on my balcony plant, I'm now picking about 10 per day. Hence the recipes that use up handfuls of them at a time. Not complaining!! You can't beat fresh tomatoes off the vine with just a little pesto or oil to dress them up.
