Sheet-Pan Steak Fajitas

10 minutes to broil and you are Good. To. Go.


Ingredients:

Flank steak

Red, yellow, orange peppers

Red onion or shallot

Fajita seasoning OR chili-lime seasoning OR combine equal parts chili powder, cumin, coriander and salt

Olive oil

Fresh lime

Toppings for serving (see Cook & Serve below for suggestions)


Preparation:

- Preheat oven to broil on high. Move oven rack to upper one-third of oven.

- Trim the fat from the flank steak. Flatten under plastic wrap with a kitchen mallet until about 1/2-inch thick. Slice AGAINST THE GRAIN of the meat into slices about 4 inches long. Place meat in a large bowl and drizzle with olive oil, sprinkle generously (let's say a Tablespoon per pound) with seasoning, and stir to coat. Squeeze fresh lime over meat bowl.

- Cut the peppers into strips and mince the onion/shallot. Combine in bowl #2 and coat with oil, seasoning and lime (like you did with the flank steak).

- Cover a baking sheet with parchment paper and spread the peppers/onion into a single layer.


Cook & Serve:

- Broil the peppers/onions for 5 minutes -- they will start to soften.

- Remove pan from oven and slide the peppers/onions to one side. Spread the meat onto the other side of the pan in a single layer. Broil for 5 minutes or until flank steak is cooked to your liking.


Oh so many ways to serve!

- Go traditional fajita and serve with warm tortillas, sour cream, lime and hot sauce.

- Nacho it up by serving over tortilla chips or corn chips. Top with nacho fun like shredded cheese, sour cream, jalapenos, olives and salsa.

- Make fajita bowls. Cook microwave brown rice -- add chopped fresh cilantro and lime juice. Start with a base of rice in the bowl. Add black beans, shredded cheese, fajita steak and peppers. Serve with an assortment of toppings: red and green salsas, pico, avocado, sour cream, jalapenos, lime, hot sauces, olives.


A Little Backstory:

I had two of my nieces over to try this recipe because, let's face it -- a sheet pan of fajita innards is a shitload of food, and I like to share. This is a great recipe to serve guests. Everything can be mixed and chopped ahead of time. And the main-event ingredients only take 10 minutes to cook, so you can chat and mingle instead of being a slave to the kitchen. Bonus: by serving all the prepared ingredients and toppings in separate bowls, your guests can make their own fajitas, nachos or bowls, so you don't have to worry about everyone's dietary preferences and restrictions.
