With a shortcut, this is a 10-minute hot meal after a loooooong day.
Ingredients:
1/2 lb. Italian sausages
*1/2 cup chopped red pepper
*1/2 cup chopped yellow pepper
*1/2 cup sliced onion
Olive oil
Red pepper flakes (if you wish)
*SHORTCUT: Buy a bag of frozen peppers and onions and heat in a skillet or the microwave.
Preparation:
Cut the sausages into 1-inch pieces. Coarsely chop the peppers and slice the onion.
Cook & Serve:
- In a skillet on medium-high, heat 2 Tablespoons olive oil. Add sausage and stir/cook until browned. Pour sausage onto plate lined with paper towel to drain the grease.
- Add a Tablespoon of oil to the skillet and cook/stir the peppers and onion until both are slightly golden and onion is translucent. (If using frozen veggies, cook until hot in the skillet ... or warm in microwave first, then add to skillet to heat up.)
- Add your cooked sausage to the skillet and mix with the veggies. Sprinkle with red pepper flakes. Serve hot and spicy.
A Little Backstory:
I made this the day Anthony Bourdain died, and posted it to Instagram with a brief tribute to the way he could bring together people with disparate views and cultures over a meal. A few days later, a friend texted me to say it felt disrespectful to ask on an RIP tribute ... but could I give the recipe for the sausage dish I posted? Here it is. I think AB would be cool with it.
