Stovetop Tortilla Melt


A low-carb hot bite to eat that's as quick as warming a pan and opening up your fridge.

A great alternative to the standard grilled-cheese sandwich. And about a 4-minute meal, start to finish.


Ingredients:

1 flour tortilla (I use Mission brand gluten-free)

Nonstick cooking spray

Cook's choice: Meats, cheeses, veggies and herbs (pictured is shredded pork and shredded mozzarella cheese)


Preparation:

Heat a cast iron pan or skillet on medium-high heat. Spray with nonstick cooking spray.


Cook & Serve:

Warm tortilla in hot skillet for 1 minute. Load up your toppings on half of the tortilla. Peek at the underside - is it golden brown? Flip the empty side of the tortilla onto the fillings. Cook one more minute until insides are melted. Cut in half and serve with fruit, chips or soup.


A Little Backstory:

Sky's the limit on insides to this melty goodness. Here are a few suggestions:

- Pizza Pocket replacement: Use real mozzarella, sliced pepperoni, basil and oregano

- Turkey lunchmeat, pre-cooked bacon, Swiss cheese and spinach leaves

- Roast beef lunchmeat, provolone cheese, frozen bag of peppers-onions combo (thaw in microwave)

- White cheddar cheese and thinly sliced apples

- Harvarti cheese, sharp cheddar cheese, fresh basil leaves, drizzle of honey

- Remember that whole roasted chicken and that pork butt I told you to cook ahead of time, shred and freeze? There are your protein bases. Add cheese and your imagination.
