Strawberry Shortcake

Look at how amazingly beautiful this is! You know I don't bake well**, but this hardly qualifies. Super easy and lovely results.


Ingredients:

1 quart of strawberries

1/4 cup sugar

2 1/3 cups Bisquick mix (I used gluten-free)

1/3 cup butter

3/4 cup milk

3 eggs, beaten

1/2 teaspoon vanilla

3/4 cup whipping cream, whipped (use the real stuff, it's just better)


Preparation:

- Preheat oven to 425 and spray baking sheet with nonstick cooking spray.

- Wash and slice strawberries.

- In a bowl, combine Bisquick and 1/4 cup of sugar. Cut in butter with pastry blender or fork. Stir in milk, eggs and vanilla. Use a serving spoon to scoop out batter and drop onto baking sheet -- should make about 6 separate lumps.

Cook & Serve:

Bake 10 to 12 minutes or until golden brown. When cool, slice the shortcakes lengthwise with a serrated knife. Top with strawberries and whipped cream.


A Little Backstory:

When I post decadent recipes like this on Instagram, people always ask who I had over for dinner. A lot of times, no one. I cook like this for myself. Yeah, even adding the little garnish with attention to presentation. Because I believe I'm worth the effort. So are you.


**I don't bake well. Here's proof: the infamous batch of cookies that became sheet after sheet of ONE BIG-ASS COOKIE.


My nephew's wife, Laura, topped this disaster with delicate heart-shaped cookies that melted and morphed into bubbly butts ... literally "big-ass cookies."
