Thursday's Nachos Become Today's Brunch


It's all about repurposing ingredients you've already cooked.


Remember that shredded chicken or slow-cooked pork butt you made earlier this week? You already made them into nachos. Now, let's use up those leftovers.


Ingredients:

Shredded pork

1 fried egg

1 slice of bread (I used gluten-free)

Leftover sliced/chopped cherry tomatoes and jalapenos


Preparation:

Fry the egg. Warm the shredded pork in the microwave. Toast the bread.


Cook & Serve:

Assemble your tasty brunch, using the toasted bread as a base. Cover with shredded pork, top with egg and veggies. Add a couple shakes of hot sauce if you're so inclined.



A Little Backstory:

When you live alone like i do, it becomes a race against time to use up leftovers. The trick is to not be stuck eating the same damn thing day after day. By assembling the ingredients for only what you intend to eat -- then storing the ingredients separately -- you have the option of reassembling them into a variety of dishes for future meals.


Tons of variation to this, depending on what you've got on hand.
