The surprise is that it's damn easy to make, and you can stuff it with whatever your heart (and stomach) desires.

Ingredients:
One boneless, skinless turkey breast (about a 1 1/2 pound breast)
Box stuffing mix (about 1/2 to 3/4 cup, prepared)
1/4 cup chopped apple
Paprika
Olive oil or butter
Alternatives for stuffing:
- Make stuffing with gluten-free bread
- Substitute a green vegetable for the apple, like fresh, chopped broccoli
- Leave out the stuffing altogether and spread with cream cheese plus a 1/4 cup chopped parsley
- Stuff just with a cup of fresh, chopped vegetables
- Stuff with 1/2 cup prepared mashed potatoes with fresh chives or parsley
Preparation:
- Preheat oven to 400.
- Place the turkey breast under plastic wrap and pound with a kitchen mallet until about 1/4 inch thick. Sprinkle both sides with paprika.
- If using main recipe above, mix your diced apple into your prepared stuffing.
- Pile/spread stuffing onto one half of the turkey breast. Fold the plain side over the stuffing and seal the edges together with toothpicks. This doesn't need to be gap free, just fastened together well enough so that any bread cubes or vegetables don't sneak out.
- Put turkey roll into a shallow casserole dish or baking dish and brush with olive oil or butter.
Cook & Serve:
Bake in 400 oven until thermometer registers 165 degrees, about 30-40 minutes. Slice and serve - don't forget to take all the toothpicks out!! A turkey gravy makes a nice addition (and you can get it canned for quick heat-up and serve!).
