The cold no-pasta pasta salad that's as colorful as it is delicious, especially in the summer.
*skeptical stare from toddler who can tell these are fake noodles*
Ingredients:
(I'm going to leave off the measurements, and say it truly depends on how much you want to make.)
Uncooked zucchini spirals
Baby heirloom tomatoes (halved)
Chopped cilantro
Shredded chicken (save time by buying a rotisserie chicken)
Chopped red onion
Cooked and chilled corn
Preparation:
Throw it all in a bowl. Mix.
Cook & Serve:
Serve chilled. It's really that easy, folks. If you'd like to serve with a dressing, I'd suggest something light and citrusy, like: 3 Tablespoons olive oil with 3 Tablespoons lemon juice with salt and pepper to taste (shake or whisk to combine fully).
A Little Backstory:
The first time I made this, it was for my niece and her son at a little poolside lunch last summer. Randi Kay and I loved it. We couldn't convince the toddler, however, it was noodles. You can't put one over on a baby palate.
